Stirfry Mince Pork and Veggies

Okay, so nobody in the family likes this dish but me. I love it because it’s super easy to make. Best of all, you can keep most of the ingredients in the freezer for one of those days when you haven’t got time to run down to the store but you have to whip up something.

I honestly don’t understand what’s not to like about this dish. It’s a colourful, all-in-one veggie and meat dish that is really tasty. Don’t ask me why the kids are dry retching over it. Go figure.

Here’s the recipe…

Ingredients:

  • Half a bag of frozen peas, corn, carrots and beans, defrosted
  • 200-300g mince pork (chicken or beef works, too)
  • 1 tbsp oyster sauce
  • 2 tbsp soy sauce
  • dash of pepper
  • 1 tsp of sesame oil
  • 1 tsp minced garlic
  • oil for stir frying

Method:

  • Heat oil and garlic, and stir fry mince pork.
  • Add the veggies, oyster sauce, soy sauce, pepper and sesame oil.
  • Serve.

You can have it with rice or stir it into some spaghetti like an Asian style Aglio Olio.
