Recipes: Roast Chicken

So we decided to work on expanding our repertoire of dinner “favourites” and went with a typical “ol’ faithful” – roast chicken. To keep it simple, we kept the herbs and spices to a minimum so as not to offend my boys’ very sensitive palates…

Roast Chicken

Ingredients:

  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • black pepper
  • 1 tsp salt
  • 3 Chicken Marylands (keep the skin on so the chicken doesn’t dry out)

Method:

  • Mix all the ingredients together except the chicken
  • Marinate the chicken for a few hours
  • Roast in 200 C oven for 30 minutes

Verdict

  • Aristotle: big thumbs-up
  • Hercules: big thumbs-down
  • Daddy: thumbs-up

Sigh… How do you cook a family meal when their taste preferences are as different as night and day? Ah well, majority rules. Sorry Hercules.
