I had an excess of Toblerone chocolate so I made this…
- 125g Toblerone chocolate, melted
- 125g butter, melted
- 1 tsp vanilla essence
- 100g brown sugar
- 2 eggs
- 265g wholemeal flour
- 2 tsp baking powder
- 180ml cream
Add all ingredients into a mixing bowl and beat until smooth and changed in colour. Pour mixture into a greased loaf pan and bake in an oven preheated to 180C for 1 hour.
- This is a modified recipe. The original recipe used sour cream, dark chocolate, 165g of castor sugar (I reduced the sugar since Toblerone is a lot sweeter than regular dark chocolate), and self-raising flour (no baking powder).
- The edges were a bit crisp but I stumbled on a solution when I packed a slice in Hercules’ lunch box with his bread. I think it absorbed some of the moisture from his bread and ended up with a nicer texture.
- We tried to make this cake a “little” healthier with wholemeal flour and brown sugar.
