Recipes: Tomato Chicken

Tomato Chicken, I discovered from my MIL, is one of my hubby’s favourite dishes. This is my first attempt at cooking it at home and it worked! All three boys loved it – which is a rarity because someone always complains about dinner – so now I’m jotting down the recipe before I forget it. My MIL will probably be frowning at my methods for making this dish but I think it achieves a similar end.

Tomato Chicken

Chinese Style Tomato Chicken

Ingredients

  • 3 Chicken Marylands
  • 2 tomatoes, chopped
  • 2 Tbsp soy sauce
  • 1 Tbsp tomato sauce
  • 1 tsp corn flour
  • 1 tsp sesame oil
  • 1 tsp thick soy sauce
  • dash pepper
  • 1 tsp sugar
  • 1 tbsp garlic, minced
  • 1 rice bowl of water
  • 1 sprig of spring onion (optional)

Method

  1. Remove the skin from the chicken (or keep it if you prefer). Separate the drum from the thigh (or you can chop the chicken into smaller pieces if you prefer).
  2. Mix the rest of the ingredients (except the spring onion) into a pot and add your chicken to marinate.
  3. Put your pot on the stove and bring to the boil then reduce heat to simmer for 30 minutes to 1 hour (until the tomato slices disintegrate into the sauce).
  4. Serve.
